VINIFICATION

Manual harvest. Selection of berries with an optical selection machine. Fermentation with indigenous yeast in steel vats and then malolactic fermentation. The aging of 24 months takes place in new barriques in Rovere French, Seguin Moreau, Icone Elégance ML. Afterwards, we carry out the bottling (without filtering)

TASTING NOTES

Vivid and intense in ruby color with garnet reflections. The aromas are ripe and highlight a rich fruit with hints of sweet cherries in relief and a slightly toasted background. The taste is powerful, vigorous, decisive, supported by the alcoholic impact contrasted by the acidic verve typical of the vine and the incisive presence of tannins. The youth of wine does not promise easy softness at the moment but, on the other hand, offers a non-trivial character that will be interesting to discover with the passage of time and the permanence in the bottle.

GASTRONOMIC COMBINATIONS

It is a wine that plays its chances on the strength of contrasts, it does not express itself at its best in simple tasting but finds its completeness at the table. Associated with grilled meats (example. Florentine steak), it manages to fully exploit the vitality of its structure.
