In recent times it has been very fashionable to talk about ancient grains: this expression refers to all those varieties of cereal which over the millennia have remained faithful to their DNA, without being manipulated by man.

Among these is spelled, the oldest cereal cultivated by man since the dawn of agriculture. It is the oldest type of wheat cultivated by man. Some archaeological findings mark its first uses as a source of nutrients since the Neolithic age.

The Romans based the nutrition of their military legions on spelled. It was used to prepare bread, focaccia and polenta. Precisely for this reason the word flour has its roots in the Latin far, which first gave rise to the term spelled.

The Latins also used spelled in marriage ceremonies. For example, one of these was called confarreatio: the spouses ate a spelled scone together to seal the union.

Over time, soft wheat, which descends from large spelled, and hard wheat, derived from medium spelled, have reduced the cultivation of the ancient wheat appreciated by the Latins.

Today it is back in fashion in the wake of the rediscovery of ancient grains and organic farming. Despite the cost, the spread of spelled has become increasingly stronger again.
