Book has been written for the home cook. Each of the 270 recipes submitted has been scaled for 6 portions, unless otherwise noted. The recipes have been tested in a home kitchen. The recipes were chosen by the contributing chefs, and, for the most part, we have preserved their originally submitted ingredients and methods. Their is also provided a "Cook's Notes & Glossary" section to help clarify the description of some ingredients and methods. 270 recipes for 35 of our region's culinary stars. Each chef is an artist in his or her own right---selecting the raw materials freely and manipulating them according to the dictates of their creativity and talent.
