Maybe you received a bottle of Prosecco or Cava as a holiday gift. Maybe you have a few bottles lingering at the back of your fridge after that housewarming or birthday party. Whatever the reason for your extra stash of bubbly, we've got a cocktail for that. We'd suggest a classic French 75, which calls for brut Champagne, while Ti and Lalli Martin (of New Orleans' iconic Commander's Palace) opt for a Paris Between the Wars, a delightful Campari and Scotch whiskey concoction that calls for Cava or any other bottle of dry bubbles you might have on hand. Read on for 12 of our favorite bubbly-based cocktails that are perfect for entertaining a crowd, or finishing off the last sips of your favorite bottle at home. Cheers!

"Sprezzatura refers to the stylishly disheveled look perfected by Italian men," says mixologist Joaquín Simó. "An artfully misknotted tie, an elegantly askew collar, mismatched socks — all done with a devil-may-care attitude." This amaro-based sour topped with sparkling rosé embodies casual elegance.

Fruity, rich, and mildly sweet dark-berry liqueur plays well with both effervescent sparkling wine in this Winter Berries Cocktail, while grain-forward bourbon adds a touch of heat. Garnish this bubbly sipper with a thin half-moon slice of lemon.

We're giving classic mimosas an extra twist by swapping out the traditional orange juice with splashes of homemade orange syrup and orange liqueur. When preparing the mimosas, make sure the syrup and Champagne are cold; chilled sparkling wine retains its bubbles better, resulting in a cleaner finish with less of a foamy mousse at the top of the drink.

This spritz from The Elysian Bar in New Orleans is an ideal aperitif, boasting sweet tangerine, herbal sage, and mild licorice flavors. It's slightly bitter and refreshing, just the thing to sip while eating a few light bites at the end of the day. The spritz is garnished with a dehydrated lemon slice — brushing it with simple syrup helps it keep its crispy, sweet texture.

Honey simple syrup is even easier to prepare than standard simple syrup; just vigorously stir together honey and water until well combined. The mellow, floral sweetness of the honey syrup pairs perfectly a touch of lemon in this tea-infused cocktail.

Pleasantly bitter, herb-infused Campari is a bracing aperitif, especially when it's blended with a little sparkling wine as it is here. Neal Bodenheimer, the owner of Cure in New Orleans, loves how the vivid-red Italian spirit tastes with fennel. "This is a perfect way to use up any leftover fennel fronds from the kitchen," he says.
