Miracle Fruit

Miracle Fruit

Miracle fruit, also known as Synsepalum dulcificum, is a small evergreen shrub native to West Africa. It is known for its red, berry-like fruits that contain a unique glycoprotein called miraculin. Miraculin temporarily alters the perception of taste, making sour and acidic foods taste sweet. This effect lasts for about 30 minutes to an hour.

The shrub produces small, dark green leaves and small white flowers. The fruit itself is about the size of a coffee bean and is typically bright red when ripe. While the fruit itself has a mild, slightly sweet flavor, its real appeal lies in its ability to modify taste.

Miracle fruit is often used for "flavor tripping" parties, where people consume the fruit and then taste various sour and acidic foods like lemons and vinegar, which then taste sweet. It is also being explored for potential applications in helping patients undergoing chemotherapy to enjoy food again, as it can make bland or metallic-tasting foods more palatable.
