Summer is around the corner, which means I’m ready to start toasting to warmer days ahead. When I’m planning a dinner party or a refreshing happy hour, a gin fizz is often what’s in my hand. This frothy, bubbly, and citrus drink just might be one of my favorite gin cocktails. I added an extra twist to this fizz recipe that truly makes it perfect for summer and spring sipping—keep reading on if you want to learn how to take it from good to great:
What is a gin fizz?
A classic gin fizz combines gin, freshly squeezed lemon juice, simple syrup, and an egg white to create a classic, refreshing cocktail. Similar to a Tom Collins—but with a frothy twist—this is the summer-worthy drink that gin lovers need to try.
How to make a gin fizz:
— The best gin to use: I recommend using a good quality gin that you enjoy drinking in this recipe—it’s the main event. Use your favorite brand, or checkout Delish’s list of the best gin brands.
— The lemon juice: Use freshly squeezed lemon juice here for the freshest flavor.
— The rosemary simple syrup: This gin fizz gets a major flavor boost from rosemary simple syrup. This recipe will make far more syrup than you'll need for 2 drinks, but kept in an airtight container it'll last 1 to 2 weeks! Use it to make more fizzes, or add it to other drinks that need sweetening like homemade lemonade or iced tea.
— The egg white: If you’re new to using egg whites in cocktails, then your bartending game is about to get an upgrade. The egg white makes this cocktail creamy, and creates a frothy top that completes the drink.
— The seltzer: The addition of seltzer is what makes this a fizz, of course. Some recipes use club soda—I prefer to use seltzer, but you can use club soda if you prefer.

Ingredients
For the rosemary simple syrup
- 1 c.
water
- 1 c.
granulated sugar
- 3
sprigs fresh rosemary
For the drink
- 2 oz.
gin
- 1 oz.
freshly squeezed lemon juice
- 1 oz.
rosemary simple syrup
- 1
large egg white
Ice
- 2 oz.
seltzer
Lemon round, for garnish
Rosemary, for garnish
Directions
- Step 1Make rosemary simple syrup: In a small sauce pan over medium heat, combine water, sugar, and rosemary. Bring to a boil and stir until all sugar is dissolved, pressing rosemary against the bottom of the pot with a wooden spoon to release it's oils. Let cool to room temperature, then strain into an airtight container and refrigerate until ready to use.
- Step 2Make drink: Combine gin, lemon juice, simple syrup, and egg white in a cocktail shaker. Shake for 10 to 15 seconds to combine all ingredients. Fill shaker with ice and shake 10 to 15 seconds more, or until chilled.
- Step 3Strain into serving glass, top with seltzer, and garnish with lemon and rosemary.
