When it comes to gin, there are a lot of different characteristics to keep in mind. You should opt for a more floral gin, like Hendrick's, which will play nicely with the fresh lemon. The inclusion of the egg white adds a nice velvety mouthfeel and the club soda adds a bit of effervescence. For this drink, it requires both a dry shake (without ice) and a wet shake (with ice), which helps to better emulsify the ingredients. The reason you don't shake with ice the entire time is because it will dilute the drink too much. So give it a dry shake for about 15 seconds and then another shake with ice for 15 seconds or so. You'll know that the drink it adequately chilled when condensation starts to form on the outside of the shaker. But don't cut corners, make sure to give the drink a thorough shake for a perfectly frothed cocktail. It's also important to use fresh lemon juice. Since you only have a couple of ingredients in this drink, you'll want to use the highest quality elements possible as you'll be tasting each and every flavor. Fresh lemon juice doesn't have as much time to oxidize and doesn't include the preservatives that keep bottled lemon juice fresh. Anything added can tweak the flavor, so fresh is always best. To finish, top the cocktail with club soda and a lemon garnish and you're ready to enjoy. Ingredients 2 ounces gin (such as Hendrick's) 3/4 ounce fresh lemon juice (from 1 lemon) 3/4 ounce Simple Syrup 1 large pasteurized egg white 2 ounces chilled club soda 1 (3- x 1-inch) lemon peel strip Directions Add gin, lemon juice, Simple Syrup, and egg white into an empty shaker and shake for about 15 seconds. Add ice to cocktail shaker; cover with lid. Shake vigorously until egg white is frothy and mixture is chilled. Strain into a chilled highball glass filled halfway with ice.
