The “It” in a Gin and It stands for Italian vermouth, which is one of only a few ingredients in this super-simple cocktail. The ratio of gin to vermouth varies widely in recipes that have been published in the last century. Here we use a two-to-one ratio for a drink that’s not too sweet, but feel free to increase the amount of vermouth if you like. And, although some people insist this drink should be served at room temperature, we prefer it stirred with ice and garnished with maraschino cherries imported from Italy.

Ingredients:

  • 2 oz. (60 ml) gin
  • 1 oz. (60 ml) sweet vermouth
  • 1 dash orange bitters
  • 3 Luxardo maraschino cherries

Directions:

In a cocktail shaker filled with ice, combine the gin, vermouth and bitters. Stir until thoroughly chilled. Strain into a cocktail glass and garnish with the cherries skewered on a cocktail pick. Serve immediately. Makes 1 drink.
